Romlettes (aptly named by my husband to be)

So what do you do when your fiancĂ© wants you to create a "pinterest" recipe link for him?  Well you sit down and after determining you can't just "make a pin" you begin a food blog with the recipe that he wants!  Yes, that is what love does.  Love designs a blog, writes out a recipe, and even remakes the recipe so that pictures can be taken and a permanent Pinterest link created just for him!  Guess I must love him an awful lot….


My man is a big eater!  He works hard and is physically active and this of course equals a BIG APPETITE!!  A smoothie or a salad will simply not suffice to fill him, and of course there must be a good source of protein to promote muscle mass :-)  So when it comes to finding ways to feed him when the fridge is looking sparse it can be difficult… but thanks to my sister's need to have chickens, we always have eggs on hand!!

So as he hunts around the fridge he decides an egg sandwich will do good for lunch, however what do I have for bread?  a few oldish dinner rolls… Thinking I'll just have to make several sandwiches, he starts to hollow out the rolls and tells me just to put the eggs in the rolls!  Ah HA!!  inspiration! I pull out my muffin pan to place the rolls in, pull out any possible vegetable I can add in from the fridge and get to it!  And that is how we ended up with Romlettes!!  a mix between an omelette and a roll…


So here is the recipe:


ROMLETTES

8 eggs
1/2 t. salt
1/4 t. pepper (approximate)
1/2 c. chopped peppers (I used red)
1 small onion finely chopped
1 c. mushrooms sliced
1/2 c. diced canadian ham
12 rolls (I used wheat and potato rolls, but go wild)
cheese
olive oil
salt/pepper to taste

Preheat the oven to 400 degrees.

Hollow out your rolls from the side, careful not to make any holes, and leaving a little big of bread (you want it to soak up the egg).  Place these, hole side up, in a muffin tin for stability.

Take your diced onions and peppers and throw them in a skillet with a little olive oil.  Once they start to cook add the mushrooms, don't stir too frequently as you want the mushrooms to really brown nicely.  Lastly add in the ham and then season with salt/pepper.

While the peppers/onions/mushrooms are cooking, place your eggs in a bowl and whip them up good with a fork.  Add in the salt and pepper and when the mushroom mixture is through cooking add that as well to the eggs.

Fill the rolls with the egg mixture until they are all the way full.  Place them in the oven and cook for 25-30 minutes.  Halfway through the baking, place a little bit of cheese on top.  Enjoy!!  I sliced mine in half and put more cheese on it!! :-D

One of the wonderful things about this recipe is that you can really use whatever is on hand in your fridge.  Depending on what you have leftover you can do tons of variations on this, from the type of bread you use, to the vegetables/meats/spices you add in!
